Coconut Flour Pancakes
Ingredients
- 6 eggs
- 1½ C milk (or coconut milk)
- 2 tsp vanilla
- 1 TBSP honey
- ¾ C coconut flour
- 1½ tsp baking soda
- ¾ tsp salt
Directions
Preheat griddle over medium-low heat
- Beat all liquid ingredients together in small bowl until well combined.
- Mix all dry ingredients in a separate bowl until well combined.
- Combine the two bowls, stirring until dry mixture is well incorporated.
- Grease griddle with coconut oil or butter, spoon approximately ¼ cup batter per pancake. Cook a few minutes per side.
