Roll-Out Sugar Cookies
Ingredients
Cookies:
- 1½ C softened butter
- 1 C confectioner`s sugar
- 1 C granulated sugar
- 2 tsp vanilla
- 4 eggs
zest of ½ lemon
- 5 C all-purpose flour
- 1 tsp salt
- 2 tsp baking powder
Icing:
- ¼ confectioners sugar
- 1 tsp milk
Directions
Cookies:
Cream butter and sugars together until smooth.
- Beat in eggs and vanilla.
- Stir in flour, baking powder, and salt.
- Cover and chill for
at least one hour (or overnight).
- Preheat oven to 400F
- Roll dough into 1/4 to 1/2 inch thick sheets and cut into your favorite shapes.
- Place 1 inch apart on an ungreased cookie sheet.
- Bake for 6-8 minutes (just browning on the bottom edge).
- Allow to cool completely.
Icing:
Mix together in small batches, adding sugar or milk to adjust consistency.
- Add color one drop at a time (stirring in after each drop) until desired color is reached.
