Peanut Butter Cup Cookies Recipe
Ingredients
- ¼ C creamy peanut butter
- ¼ C vegetable shortening
- ¼ C granulated sugar + 2-3 (to roll dough in)
- ¼ C packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 C all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 24 miniature peanut butter cups, unwrapped and refrigerated
Directions
- Preheat the oven to 350 degrees. Spray a mini muffin tin with a nonstick spray like Baker's Joy.", 'Beat the peanut butter, shortening, 1/4 cup sugar, and brown sugar until creamy. Add the egg and vanilla and beat again.
- Stir together the flour, baking powder, and salt. Slowly mix into the peanut butter mixture.
- Roll the dough into 24 even balls. Roll each dough ball in the remaining granulated sugar.
- Place in prepared muffin tin. Bake for 8-9 minutes. Remove from the oven and let cool in the pan for 2 minutes.
