Baked Rigatoni
Ingredients
- 12 oz rigatoni
- 1½ C ham or baked chicken
- 1 C crumbled feta cheese
- 1 C grated mozzarella
- 1½ tsp dried thyme
- 1 C milk
- 12 oz frozen broccoli
One of the following:
- 4 large plum tomatoes, chopped
- ½ C sun dried tomatoes
- ½ C roasted red peppers
Directions
- Preheat oven to 375F.
- Butter a 13x9 Pyrex baking dish.
- Cook rigatoni in salted water until just tender (still firm to the bite), then drain.
- Put pasta in prepared baking dish.
- Mix in meat (ham or chicken), tomatoes (or peppers), cheeses, and thyme.
- Pour milk over top, sprinkle with salt and pepper and toss to combine.
- Cover with foil.
- Bake for 45 minutes total - remove after 15 minutes, uncover and stir to mix in melted cheeses, recover and continue baking for 30 minutes more.
