Yellow Rice
Ingredients
- 2 C jasmine rice (or basmati)
- ¼ C extra virgin olive oil
- 1 small yellow onion, finely chopped (about 1 C)
- 4 cloves garlic, minced
- 2½ tsp kosher salt
- 1 tsp ground turmeric
- 2⅔ C chicken broth (3 C if using basmati)
- Fresh cilantro for garnish (optional)
Directions
- Rinse rice until water runs clear, then set aside to drain
- In medium saucepan, heat oil over medium heat, then add onion and garlic, stirring frequently until fragrant and softened (about 5-7 minutes). Take care not to burn the garlic.
- Add the rice and sprinkle with turmeric and salt. Stir to combine and cook the rice with spices in oil for about 1 minute.
- Add water and bring to boil, then reduce heat to simmer and cover for 15 minutes.
- Turn off heat and allow rice to continue steaming covered for 10 minutes.
- Gently fluff with fork and serve.
