Porcupine Balls
Ingredients
- 1 lb ground beef
- 1 C instant rice, uncooked
- 1 small onion, finely chopped
- 1 egg beaten lightly
- 1 tsp salt
- ¼ tsp pepper
- 10 oz can cream of mushroom soup
- ½ C water
Directions
- Combine beef, rice, onion, egg, salt, and pepper.
- Shape into about 16 1-inch balls
- Pour soup and water into skillet, stir and heat to boiling, then add meatballs.
- Cover skillet and simmer gently for about 40 minutes.
- Serve with / over rice.
