Smashed Potatoes with Parmesan
Ingredients
- 2 Lbs Small Potatoes
- 3 TBSP Butter, Melted
- ¼ tsp Granulated Garlic
Grated Parmesan Cheese (about ⅓ C)
Vegetable Oil
Directions
Wash potatoes and place in Instant Pot on top of steamer basket.
- Add 1 ½ C water to Instant Pot.
- Cook potatoes in Instant Pot for 6 Minutes. Allow 5 minutes of natural release, then quick release the rest.
- Cool potatoes on cooling rack (or in fridge up to 24 hours before).
- Preheat grill.
- Smash potatoes between 2 large white Corelle bowls (put potato in one bowl, stack other on top).
- Repeat until all potatoes are smashed.
- Melt butter and mix with garlic. Baste each smashed potato.
- Add oil to grill, place potatoes on grill.
- Grill for 3 minutes each side, flipping twice. Add parmesan cheese to top before flipping both times.
- For the last side, cook until cheese is golden brown, approximately 90 seconds.
