Corn Bread Muffins
Ingredients
- ½ C butter, softened
- ½ C white sugar
- ⅓ C honey
- 2 eggs
- ½ tsp salt
- 1½ C all-purpose flour
- ¾ C cornmeal
- ½ tsp baking powder
- ½ C milk
- 1 can sweet corn, drained
Directions
Preheat oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups.
- Soak cornmeal in milk for 15 minutes, while gathering remaining ingredients.
- In a large bowl, cream together butter, sugar, honey, and salt for approx 4 minutes.
- Add eggs to the creamed mixture, fully incorporate.
- Mix in flour and baking powder; blend thoroughly. Stir in cornmeal & milk mixture, followed by corn. Pour or spoon batter into prepared muffin cups.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
