Fried Rice
Ingredients
- 1½ C uncooked jasmine rice (cooked the day before)
- 1 small onion, diced
- 1 C frozen peas and carrots (thawed)
- 2 eggs
- 2 TBSP diced green onions
- 1 TBSP minced garlic
- 3 TBSP peanut or sesame oil
- ¼ C Shaoxing rice wine (or water)
- 2 TBSP soy sauce
- 1 TBSP sesame oil
- 1½ tsp salt
Directions
- Put 1 TBSP oil in skillet on high heat. Saute onion and garlic until it begins to caramelize (brown), then transfer to a separate bowl.
- Add peas & carrots to skillet. Cook for a minute or two, then add to onion bowl.
- Add remaining 2 TBSP oil to skillet. After 15 seconds add the rice, stirring to break up clumps.
- Add salt and fry rice for several (4-5) minutes
- Make a small well in the center and crack the eggs into it. Scramble them into the rice.
- After eggs are fully cooked, return veggies to skillet, and mix thoroughly. Add rice wine and stir for 1 minute.
- Add soy sauce (to taste/color) and sesame oil. Continue to stir for approximately 1 minute. Add salt & pepper as desired
