Meatloaf (IP)
Ingredients
- 1½ lb mix ground pork and 80/20 beef chuck (1 lb beef and ½ lb pork)
OR
- 1 ⅓ lbs ground beef (from costco)
AND
- ¼ C crumbled goldfish crackers w/2tbs milk in crumbs to soften
- 2 eggs
- ½ C grated cheddar
- 2 TBSP ketchup
- 2 TBSP Worcestershire sauce
- 1 TBSP mustard
- 1 drop liquid smoke
- ½ chopped onion
- 1 tsp of onion powder
- 1 tsp of garlic powder
Directions
Place the trivet that came with the pot at the bottom, then place steam rack on top of the trivet.
- Make a sling with aluminum foil, and place the meatloaf on top of the sling, molding to desired shape.
- Folded over the foil and place potatoes on top (if mashed potatoes are desired)
- Set timer for 25 mins and do a 5 min natural release, then into the broiler with ketchup and brown sugar glaze on top to brown.
