Turkey Chili (IP)
Ingredients
- 1 TBSP olive oil
- 2 C yellow onion, diced
- ½ C green bell pepper, diced
- ½ C red bell pepper, diced
- 2 TBSP jalapeno, seeded & minced
- 1 lb ground turkey
- 1½ tsp salt
- ½ tsp black pepper
- 2 TBSP chili powder
- 1 tsp oregano
Either:
- 2 cans cannellini beans (drained & rinsed)
- 1 C chicken stock
- OR -
- 1 C cannellini beans (pre-soaked 8 hours with 1 ½ tsp salt)
- 2½ C chicken stock
Directions
- Set Instant Pot to "Sauté" and add oil, onions, and peppers. Cook until the onions are translucent.
- Add ground turkey and seasonings and sauté until almost cooked, about 8-10 minutes
- Add pre-soaked beans and chicken stock. Close lid and press "Bean/Chili" button. Cook for 30 minutes, then remove lid.
- Serve with your favorite fixings (Sour Cream, Monterey Jack Cheese, Cilantro)
Note:
- Can substitute great northern beans or kidney beans for cannellini.
- To make it less spicy, you can leave out jalapeno.
